Italian Sausage Stuffed Chicken With Alfredo Sauce
Today we will learn how to make a quick and easy Italian Sausage Stuffed Chicken. For a slight twist we will finish with an Alfredo sauce for an irresistible dish simply made.
Sausage Stuffing:
Olive oil
1 Medium/small yellow onion, fine chop
1 clove garlic, fine chop
1/2 lb Italian sausage, removed from casing
Crumble the sausage during or prior to cooking. Place enough oil to cook your sausage into a frying pan and set to high. Remove from heat and strain. If wanted, you may blend into a paste. Alfredo sauce may be used to thin/thicken the stuffing as necessary.
Alfredo Sauce:
1 Cup heavy cream
1 Clove garlic, crushed
1 1/2 Cup Parmesan cheese
1/8 Cup dry parsley
Salt and pepper to taste
Place your cream into an unheated saucepan. On medium to medium-high heat, continually stir the cream with a wooden or plastic spoon until a slow boil begins. Continue stirring and add the other ingredients. When all ingredients are blended to a smooth finish remove from heat. Salt and pepper to taste. Be careful here. Do not burn the cream. Burnt cannot be fixed. When it comes to salt, under-salting can be fixed. Over-salting cannot.
Chicken Stuffing:
Lightly oil a glass baking dish big enough for the six breasts and sauce. Pour in a small layer of Alfredo sauce. Split and stuff each breast. Evenly space the breasts throughout the baking dish. Toothpicks may be used to secure the chicken if needed. Pour enough sauce so that each breast is covered to mid-point. Cover with foil and bake for 30-35 minutes. Uncover and baste the chicken with the remaining Alfredo sauce. Bake uncovered for an additional 10-15 minutes. The Italian sausage stuffed chicken may be served on a bed of fettuccine with sides of lightly browned garlic bread and Parmesan buttered asparagus.
